Adapted from Arman’s The Big Man’s World® chocolate espresso cake recipe.

Ingredients
Cake

  • 4 1/2 cups high-quality all-purpose flour
  • 3/4 cup high-quality cocoa powder
  • 3 cups raw brown sugar or 1 1/2 - 1 2/3 cup honey or maple syrup
  • 1 tablespoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract or 1 vanilla pod, seeds scraped
  • 3 tablespoon apple cider vinegar
  • 1 1/4 cups butter, ghee, or neutral vegetable oil
  • 3 cups brewed FS or Bulletproof clean coffee cooled to room temperature
  • 3 cups Healthy Frosting (see below)
  • Healthy Frosting

  • 1/2 cup coconut oil melted
  • 3 tablespoon maple syrup
  • 1/2 cup cocoa powder
  • 1 cup unsweetened applesauce
  • 1 tablespoon coconut flour or corn starch (Optional – Use if you need to use it immediately, without refrigerating).
  • Instructions
    Cake:

    1. Preheat the oven to 180C/350F. Grease three 8-inch cake pans and set aside.

    2. In a large mixing bowl, add your dry ingredients and mix well. Add the wet ingredients and stir until it is a thick batter.

    3. Distribute the batter evenly amongst the three cake pans. Bake the cakes for 25-27 minutes, or until a skewer comes out mostly clean.

    4. Let the cakes cool completely, before slicing each cake into two-three pieces. Place a single layer on a flat surface, and spread with a thin layer of frosting. Add the second piece of cake, followed by more frosting. Repeat the process until you have all pieces of cake frosted and stacked. Spread the remaining frosting around and all over the cake. Let it sit for 30 minutes, before slicing and serving.

    Healthy frosting:

    1. In a large mixing bowl, combine your coconut oil, sticky sweetener of choice (honey or maple syrup), and cocoa powder. Mix until a glossy liquid chocolate texture remains.

    2. Add your unsweetened applesauce. Start with 1 cup and depending on what texture you are after, increase.

    3. Refrigerate for at least 20 minutes, to thicken slightly. If you need to use it immediately, add a tablespoon or two of coconut flour/cornstarch.
